The cocoa bean guillotine allows us to perform the cutting test of our beans. This is a simple way to test the quality of the post-harvest process. We randomly select 50 beans, load them into the guillotine, and a blade is driven through the beans. We can assess the quality of the sample by looking inside the beans and analyzing the level of fermentation.
